Peach and Onion Coffee Cake
Ingredients
1/4 cup butter or margarine
2 yellow onions, medium size, cut into thin wedges
1 16 oz can cling peach slices, drained
1 package cinnamon swirl muffin mix
1 egg
3/4 cup water
Directions
Melt butter in large skillet. Add onions and cook, stirring over medium-low heat until buttery and light golden, about 15-20 minutes.
Stir in peaches and set aside. Prepare muffin mix with egg and water as package directs, adding swirl packet as directed. Pour into greased 9-inch square baking pan. Top with onion-peach mixture, then sprinkle with crumbly topping from muffin mix package. Bake at 400 degrees F for 35 minutes or until baked in center. Makes 9 squares.
